Sky High Biscuits

2 cups self-rising flour

½ cup Crisco shortening ( I use the butter flavored)

1 Tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

½-3/4 cup buttermilk

Put your flour and sugar into a large mixing bowl, using your pastry blender or two knives, cut the shortening into the flour until it resembles small peas. Slowly add the buttermilk as to not make the dough too moist and stir until it is moistened and forms a ball. Knead slightly on a floured surface. Using a rolling pin, roll the dough until it is about ¾ of an inch thick. With a floured cookie cutter, cut the biscuits without turning the cutter in the dough. (if you turn the cutter it will cause your biscuits not rise and become hard little hockey pucks when they bake.) Brush the tops of the biscuits with buttermilk and little sugar to get that perfect coating.

Bake in 400 degree oven on a baking sheet that has been sprayed with cooking spray, for 20-25 minutes. Enjoy with butter and the jam of your choice.
